Fermentology is about the culture, history, and science of fermented foods. The chapters in this digital collection include the NC State Department of Applied Ecology’s mini-seminars along with essays and transcripts of the talks that thread in media, interactive elements, and links to other resources. The goal is to extend and enrich the lectures, inviting interested viewers to become readers, and maybe even engaged participants in the ideas presented.
This project was a collaboration between the NC State Department of Applied Ecology’s Public Science Lab and the NC State University Libraries, with support from the Center for Evolutionary Hologenomics at the University of Copenhagen. It was the work of many people, including the speakers from around the globe who gave Fermentology talks and the team of graduate assistants in the Libraries’ Open Knowledge Center who edited the seminar transcripts and enriched them with images and other media. The authors provided invaluable feedback on the transcripts of their talks, as well as the media that accompanies them. We utilized the CRediT taxonomy in the metadata of each chapter to recognize the labor involved in this project.
